World’s Best Caesar Salad

We love a good Caesar salad and feel like people don’t understand how easy and how much better it is when you make your own dressing. Not sure why little gems make all salads taste better but if you can find them it will make a huge difference. This is how restaurants make their salads taste so good so just perfect your dressing and eating salad will be very easy!!

Ingredients

  • Little gem lettuce or crunchy lettuce like romaine
  • Bread of your choosing + panko breadcrumbs (we like both) - about 2-3 cups bread cubes and 1/3 cup panko
  • 2 anchovies (optional but do it)
  • 2 cloves grated garlic
  • 1 egg yolk
  • 1 tbsp Dijon
  • 1/4 cup grape seed oil
  • 1/4 cup olive oil
  • juice of 1/2 lemon
  • Dash of Worcestershire sauce
  • Dash of tobasco or hot sauce
  • 1/4 cup freshly grated parm
  • Salt & pepper

Instructions

  1. Start by preparing your bread crumbs, we used some sliced baguette and panko breadcrumbs, we like the combo of both so you get a crunch with every bite
  2. Top with 1 clove grated garlic, a little grated parm, olive oil to coat, and salt and pepper - bake at 400 for 5-7 minutes
  3. Prepare your dressing...all can be made in the same bowl your serving in so save dishes
  4. Start by mashing your anchovies the add 1 clove grated garlic, add egg yolk and whisk
  5. Add the Dijon, this is where you’ll want to whisk a lot then slowly add in oils to emulsify, starting with grapeseed then moving to olive oil
  6. Add your remaining dressing ingredients - lemon juice, Worcestershire, Tabasco, parm, and salt and pepper
  7. Toss ingredients together and top with more cheese and fresh cracked pepper
