Corn Salad

 

Feel like everywhere we look people are talking about fall recipes…well we still want to savory the end of summer with this corn salad

The recipe can vary based on the items you have in your fridge and add as much or as little depending on who you are serving!

Serves 4

ingredients

  • 1 cup halved cherry tomatoes

  • 3 slices mini cucumbers

  • 2 ears of sautéed corn off the cob

  • 1-2 peaches, diced

  • 1/2 large red onion sliced

  • 1/2 cup crumbled fresh feta

  • fresh herbs like basil and mint

  • dressing: 1/4 cup red wine vinegar, 1 tbsp honey, 1 tbsp dijon, 1/4 olive oil, squeeze of lemon juice, salt and pepper

  • start by prepping your veggies, halved cherry tomatoes, sliced cucumbers, diced peach

  • cook down corn cut fresh off the cob (we sautéed for 10 mins with a spash of water)

  • slice half a red onion and this will mix in with your dressing so they can pickle

  • dressing: 1/4 cup red wine vinegar, 1 tbsp honey, 1 tbsp dijon, 1/4 olive oil, little lemon juice, salt and pepper

  • Let that marinate on the onions for 10 minutes

  • Add crumbled feta, basil, parsley or any fresh herbs

This can stay fresh in thr fridge for a few days or add over lettuce and enjoy!
