Miso Black Cod

 

“Copycat “ Nobu Miso Black Cod with soba noodles, mushrooms, and pickled cucumbers made with @alaskansalmoncompany’s fish!

Ingredients

  • 2-4 (8 oz) black cod filets

  • 1/4 cup sake

  • 1/4 cup mirin

  • 1/4 cup miso paste

  • 3 tbsp sugar

  • soba noodles

  • 4 tbsp sesame oil

  • 1 tbsp soy sauce

  • 1 tbsp rice wine vinegar

  • salt

  • 1-2 carton of shiitake mushrooms

  • 1-2 tbsp @trybachans or soy sauce

  • baby cucumbers (sliced thin)

  • soba noodles

  • sesame seeds and scallions for garnish

  • start by combining your miso marinade by brining sake and mirin to boil, cook off alcohol then turn heat low add miso and whisk, turn up heat again and add sugar - let cool

  • once marinade cools marinate your fish, you can do this for anywhere from 4 hours to 2 days

  • meanwhile make the cucumbers, slice thing ideally with a mandolin and sprinkle with a teaspoon of salt to bring out moisture, let sit for 30 minutes and squeeze dry - add 1 tbsp sesame oil, 1 tbsp rice wine vinegar, scallions and sesame seeds

  • mushrooms - sear in 1 tbsp sesame oil and a little vegetable oil if needed until crispy then we topped with @trybachans (DM us for a discount code) or soy sauce if you don’t have that

  • cook fish by drying fillets and heating 1 tbsp of sesame oil in a pan, sear off the top then flip ad cook in 400 degree oven for 8 minutes

  • meanwhile, cook soba noodles as instructed and finish with last tbsp of sesame oil and 1 tbsp of soy sauce

  • Plate nicely over soba noodles (could also serve with rice) but this fish is addictive!
