Pasta alla Norcia

 

Ever tried pasta alla norcina? Well we just did and we’re obsessed. It’s an creamy italian style pasta with sausage. Made it with these colorful farfalle and @trufflinnyc fresh black truffles on top. Here’s how you can make it…

Serves 3-4 with a 1lb bag of pasta

ingredients

  • add 2 tbsp of olive oil, 2 Rosemary sprigs, and 4 cloves of whole garlic to a pan - brown for 5 minutes on medium heat

  • remove the garlic and Rosemary then add 1/2 lb sweet Italian sausage until browned and crumbled

  • start boiling your pasta in salted water

  • adding 1/2 dry white wine and cook off

  • turn heat to low and add 1 cup heavy cream

  • let simmer and add 1 cup grated parmesan cheese (pecorino would be nice too)

  • slowly add in small amounts of pasta water to thicken the sauce then add pasta with 1 minute cook time left, finish cooking in the sauce

  • add pasta water to create desired consistency, finish with salt and pepper and top with more grated cheese

Luckily we had some @trufflinnyc black truffle to finish but not necessary, you could also use truffle oil if you wanted that flavor.
