Red Pepper Pasta
Red Pepper Pasta
No this is not vodka sauce or mac and cheese - this is creamy red pepper sauce.
Ingredients
- 3 red peppers, roasted then sliced
- 1 whole onion, sliced
- 4 cloves garlic, sliced
- 2-4 tbsp of calabrian chili paste (depending on spice prefernce)
- dash of red pepper flakes (same note above)
- 4 tbsp olive oil
- 2 tbsp tomato paste
- 1 - 1 1/2 cups heavy cream
- 1 lb pasta
- 1-2 cups grated pecorino
- 2 tbsp butter
- 1/4 cup pasta water reserved
- parsley (not needed)
- Salt and pepper
Instructions
- Start by coating your peppers in 2 tbsp olive oil and broil until charred (10 mins), set aside covered with plastic wrap to cool
- Once cooled, remove shared skin from peppers and slice
- Sautee onion and sliced roasted red peppers in remaining olive oil (you can buy them pre-roasted but this extra step helps with the flavor)
- Once cooked down after 10 mins add garlic, Calabrian chili paste, red pepper flakes, and tomato paste let caramelize then add cream
- Transfer to blender and then place back over stove and melt butter
- Cook pasta and generously salt water
- Combine pasta, grated pecorino, and 1/4 cup pasta water
- Finish with parsley and grated cheese!
