Sausage Vodka Pasta

 

Sausage fusilli vodka recipe!

ingredients

  • 1 cup tomatoes, found these great colorful grape tomatoes

  • 3 cloves garlic, minced

  • half an onion diced, or one large shallot

  • 1/4 cup chopped basil

  • 1 lb sweet Italian sausage

  • 1/4 cup good olive oil, we used @agricola_maraviglia

  • 1/3 cup tomato paste

  • red pepper flakes, to taste depending on spice level you desire

  • 3 tbsp vodka

  • 1 cup cream

  • 1/2 lb fusilli or any pasta, adjust recipe based on quantity of pasta

  • save 1/2 cup pasta water!

  • 2 tbsp butter

  • 1/3 cup grated parm

  • salt & pepper to taste

recipe

  • prep your ingredients: half tomatoes, mince garlic, dice onion, chiffonade basil, remove casing on sausage

  • add half the olive oil and brown sausage, remove from pan

  • add your veggies and remaining olive oil

  • let cook down for 3-5 minutes then add tomato paste and red pepper flakes (as much or as little as you want) - let caramelize!

  • now start making your pasta, salt water heavily and save that pasta water once pasta is almost done!

  • add vodka and cook off for 2 minutes, then add cream, sausage back, and a little pasta water (keep adding to thin sauce) on low heat

  • add fusilli, butter, parm, and basil, top with more parm as desired!
