Steak Frites with Cowboy Butter

We love a good medium rare steak and pairing it with crispy fries and a homemade cowboy butter for dipping makes it even better.
Ingredients
Cowboy Butter
- 6 tbsp butter
- 3-4 cloves garlic, minced
- 1/3 cup chopped parsely
- Few sprigs thyme, removed from the stems
- 1 tbsp chopped taragon
- 1 teaspoon lemon zest
- Juice of 1/2 lemon
- Pinch of paprika and red pepper flakes (add more for extra heat)
- Dash of worcestershire sauce
- Salt & pepper to taste
Steak & Frites
- 1 bone in strip steak or ribeye, preferred (sizing dependant on how many you are serving)
- 2-4 russet potatoes, peeled and sliced into thin fries (quantity dependent on how many you are serving)
- Vegetable oil for frying
- 2 cloves garlic
- Sprigs of rosemary and thyme
- 1 tbsp butter
- Flakey salt & pepper
- Grated parm, optional
Instructions
- Start by making your cowboy butter - melt butter and slowly add all ingredients, this can sit off the heat and be re-warmed before serving
- Prep fries and let them sit in an ice bath for 30 minutes, rinse and dry very well
- Meanwhile, heat your oil for frying, this should be on medium-high heat, once ready (test oil by adding a small piece of a fry and it should bubble), drop fries in batches for the first fry - maybe 1-2 minute max, remove and set on a paper towel
- While those cool, season your steak with flakey salt and pepper
- Cook steak on high heat to form a crust (being careful not to burn), once both sides are browned add butter, herbs, and garlic to pan and baste, remove and let cool - you want the internal temp to hit 130-135 for medium rare
- While steak cools, fry potatoes for a second time until golden brown - toss with salt, parm, garlic and herbs from the steak
- Serve with steak, fries, and melty cowboy butter!
