Vodka Pasta with Burrata

 

So many requests for this vodka pasta recipe with burrata! Used new @sfoglini cascatelli pasta shape and it was perfect!

Recipe for 1lb pasta, feeds 4-6 depending on how hungry you are.

Method

  • Add one medium finely cut shallot and 2-3 cloves grated garlic to 1/4 olive oil in a large pan

  • Sweat down for 3-5 minutes and add half a cup of tomato paste, let it caramelize

  • Add as much red pepper flakes or calabrian chili paste as you want (we use about 1/2-1 teaspoon), 3 tablespoons of vodka and cook off alcohol (1 minute)- you can always add more spice later but start here.

  • Add 2 cups heavy cream

  • Make 1lb pasta and heavily salt water, you can use any pasta you want - SAVE 1 CUP PASTA WATER

    • Quick tip: under cook the pasta ever so slightly, like 1 minute under so it finishes cooking in the sauce

  • Add a bit of pasta water at a time, 2 tablespoons butter, 1 cup of freshly grated parm, and chiffonade fresh basil to sauce - don’t forget to taste for salt and pepper

  • Finish off with fresh room temp burrata, parm, and more basil
