Cheddar Biscuit Pot Pie

This dish did not need to be as good as it was. A rich, herby chicken filling under craggy cheddar buttermilk biscuits — bake off the extra dough and snack on biscuits while it cooks.

Cheddar Biscuit Pot Pie

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp garlic powder
  • 2 tbsp olive oil
  • 3–4 carrots, peeled and diced
  • 2–3 celery stalks, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 large leek (bottom whites only), washed well and diced
  • 10–15 button or cremini mushrooms, cut into 6ths or 8ths
  • 5 sprigs thyme, removed from the stems
  • 3 tbsp butter
  • 2 tbsp Cognac
  • 3 tbsp flour
  • 1/4 cup heavy cream
  • 2 cups chicken broth
  • 1/4 cup parsley, chopped
  • 1 egg, for egg wash
  • Salt and pepper to taste

Preparation

    Preheat your oven to 350 degrees, coat the chicken in 1 tbsp olive oil, then season with salt, pepper, and garlic powder on both sides — roast for 20–30 minutes until cooked through and set aside to cool.

    In a large dutch oven on medium heat, add butter and the remaining tbsp of olive oil and sauté carrots, celery, onions, and leeks for about 5 minutes, seasoning with salt and pepper.

    Add mushrooms, thyme, and garlic and continue to cook.

    Once softened (do not overcook — you still want some texture), add flour and toast it off to remove the floury flavor.

    Add cognac and cook off the alcohol, then top with cream and chicken broth.

    Once the chicken has cooled, shred it with two forks and add to the filling with the parsley — make sure the liquid isn't too loose or too thick, and taste for seasoning.

    Pour the chicken mixture into a pie dish and scoop on generous servings of the biscuit mixture, brush with heavy cream, and top with cracked pepper.

    Bake at 375 degrees for about 25–30 minutes until golden and cooked through — the biscuits should be toasty with no wet dough when you pull them apart.

    Let cool slightly, top with more herbs, and enjoy!!

Cheddar Biscuits

Ingredients

  • 2 cups all purpose flour
  • 1 tbsp sugar
  • 1 stick cold butter, grated
  • 1 tsp grated garlic
  • 1 cup buttermilk
  • 1/2 tsp salt
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped herbs like chives, scallions, or parsley
  • Heavy cream, milk, or egg wash to brush on top
  • Cracked pepper

Preparation

    Mix the dry ingredients together, then grate in the butter and squeeze it with your hands to form a crumbly flour mixture — be careful not to overheat the butter.

    Slowly incorporate the buttermilk, then add your mix-ins of cheddar and herbs.
