Chicken Fried Rice (packed with veg)

Ingredients

  • 1-2 cups of uncooked white rice or 3-4 cups of cooked day old rice
  • 1/2 a white onion, diced finely
  • 2-3 whole carrots, peeled and diced finely
  • 3-4 cloves of garlic, minced
  • 1 inch knob of grated ginger or ground ginger
  • 3 chicken breasts, diced
  • 1/2 a zucchini, diced finely
  • 1 cup frozen cauliflower rice
  • 2 eggs scrambled
  • 1 egg fried (optional)
  • 1/4 cup - 1/3 cup low sodium soy sauce or coconut aminos
  • 3-4 tbsp sesame oil
  • 1 tbsp butter (optional)
  • scallions
  • chili crisp oil
  • sesame seeds
  • optional salt & pepper

Preparation

    Fried rice is best with day old rice but unfortunately, we do not always have that on hand so we made rice fresh - prep that (follow instructions on the package or according to your rice cooker). _If making fresh - be sure to wash your rice until the water runs clear.

    Start by dicing chicken breast into 1 inch cubes and preheat 1 tbsp of sesame oil in a wok and sear off chicken until golden - you can add some of the soy sauce, butter, garlic, and ginger to season

    The bulk of this recipe takes time cutting all the veggies so while the chicken cooks…chop your onions, carrots, zucchini, garlic, & ginger

    Pull the chicken out once cooked (about 8 minutes), add onions and carrots (sweat down 5 minutes), add zucchini, garlic & ginger - use 1 more tbsp of the sesame oil

    Now scramble your eggs in a bowl or move veggies aside and crack eggs in the wok to scramble

    Add cauliflower rice, the finished white rice, and chicken (with the juices) back in

    Now slowly add more sesame oil and your soy sauce - tasting along the way to get the desired level of soy sauce. _If you are using a full sodium soy sauce you likely won’t need salt but if using low sodium you can salt and pepper to taste_.

    Let this almost caramelize in the pan and if you like a richer “hibachi-like” fried rice, add the tbsp of butter

    To plate, pack a good amount of the fried rice into a small bowl and flip onto a plate

    Top with a fried egg, scallions, sesame seeds, and chili crisp oil
