Episode 7 of our cozy dinner series cannot get any cozier than a puff pastry chicken pot pie. This dish is so nostalgic and extremely cozy, also it’s very easy to make.

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 tbsp of garlic powder
  • 2 tbsp olive oil
  • 3-4 carrots, peeled and diced
  • 2-3 celery stalks, diced
  • 1/2 an onion, diced
  • 2 cloves garlic, minced
  • 1 large leek (bottom whites only), washed well and diced
  • 10-15 medium sliced button or cremini mushrooms, cut into 6ths or 8ths
  • 5 springs thyme removed from the stems
  • 3 tbsp butter
  • 2 tbsp Cognac
  • 1/3 cup flour
  • 1/4 cup heavy cream
  • 2 cups chicken broth
  • 1/4 cup parsley, chopped
  • 2 sheets thawed puff pastry
  • 1 egg, for egg wash
  • Salt and pepper to taste

Preparation

  1. 1

Preheat your oven to 350 degrees and coat chicken in 1 tbsp olive oil then season with salt, pepper, and garlic powder on both sides - roast for 20-30 minutes until cooked through, set aside to cool

  2. 2

In large dutch oven on medium heat, add butter and remaining tbsp of olive oil to a pan and saute carrots, celery, onions, and leeks for about 5 minutes, season with salt and pepper

  3. 3

Add mushrooms, thyme and garlic and continue to cook

  4. 4

Once all are softened (do not overcook because you still want some texture to your mixture), add flour and toast off to remove the flour-y flavor

  5. 5

Add cognac and cook off the alcohol and top with cream and chicken broth,

  6. 6

Now that your chicken has cooled, pull the chicken with two forks to shred, add to the filling mixture with parsley - make sure the liquid isn’t too loose or too thick and taste for seasoning

  7. 7

Take your thawed puff pastry and lay across in your 8-10 inch pie crust, smoothing down the sides to fit the pan

  8. 8

Top base layer with chicken mixture, be sure not to over stuff but it should just fit

  9. 9

Roll out second layer of puff pastry and top mixture with it, cut off the excess

  10. 10

Pinch the two layers together and seal with a fork then brush lightly with an egg wash mixture

  11. 11

Increase oven temp to 400 degrees and bake for about 25-30 minutes until golden and cooked through
