Greek Dinner

August is peak tomato season, so we build a whole Greek feast around our no-lettuce Greek salad. Meatballs, lemony garlic potatoes, and tzatziki round it out — each one stands on its own too.

Greek Dinner

Greek Salad

Ingredients

  • 3 large heirloom tomatoes or 1 pint of cherry tomatoes, in rough quarters
  • 1 cucumber, peeled and roughly/largely diced
  • 1/2 green pepper, sliced
  • 1/4 red onion, sliced
  • Handful of Kalamata olives, quartered
  • 1/2 block feta cheese (not pre-crumbled)
  • Handful dill & scallions, chopped
  • ~1/4 cup GOOD olive oil
  • ~3–4 tbsp balsamic glaze
  • Generous amount of greek seasoning or oregano
  • Salt & pepper

Preparation

    Combine all the ingredients in a large salad bowl, except the feta.

    Mix olive oil, balsamic glaze, greek seasoning, and salt & pepper — whisk until combined.

  3. 3

    Generously pour over dressing and mix salad (add dressing slowly to avoid overdressing).

    Finish with feta, more herbs, and greek seasoning!

Greek Meatballs

Ingredients

  • 2 lbs 85/15 ground beef
  • 1/2 red onion, diced finely
  • 3 cloves garlic, minced
  • 1/4 cup chopped herbs like parsley, dill, chives, or scallions
  • 1/2 cup frozen chopped spinach, drained
  • 2 eggs
  • 1/3 cup panko breadcrumbs or any breadcrumb
  • 2 tbsp whole milk
  • 1/2 block feta cheese, crumbled
  • 1/2 tbsp olive oil
  • Greek seasoning
  • Salt & pepper

Preparation

    Sauté the onions and garlic in a little olive oil until translucent, 5 minutes.

    Combine all ingredients in a bowl and mix well — get in there with your hands.

    Roll into equal shaped balls (we used a small cookie scooper) and place on a parchment lined baking dish.

    Bake at 375 degrees for ~30 minutes until cooked through — do not overcook or they will dry out.

Lemony Garlic Potatoes

These are the best side dish and can be used with so many meals!!

Ingredients

  • 10 Yukon gold/yellow potatoes, peeled and sliced into wedges
  • 4 cloves garlic, grated
  • 1 small lemon, juice + 1/2 tbsp of lemon zest
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • Salt & pepper
  • Greek seasoning

Preparation

    Generously pour olive oil in your baking dish (use a dish you can easily cover with tall sides) and layer potatoes evenly.

  2. 2

    Top with garlic, lemon juice and zest, chicken broth, salt & pepper, and greek seasoning.

  3. 3

    Cover and bake at 400 degrees for 30 minutes, then uncover and cook another 15–20 minutes until browned (you can even broil it if you need).

Tzatziki

Ingredients

  • 2 cups greek yogurt (2%, 5%, or full fat) — we like FAGE
  • 1/2 cucumber, grated with the liquid squeezed out
  • 3 tbsp chopped dill
  • Juice of 1/2 small lemon
  • 1 clove garlic, grated
  • Salt (generous) and pepper
  • Olive oil

Preparation

  1. 1

    Combine all ingredients in a bowl and taste for seasoning — it needs more salt than you think.

    Finish with olive oil.
