Twice Baked Potatoes

Start by baking your potatoes for about an hour at 400 degrees, poke with fork a few times, drizzle with olive oil and sprinkle with salt and pepper

Once soft to the touch let cool slightly then cut in half, scrape out insides leaving a thing layer so the potatoes stand up

To make filling: we used 3 potatoes so add the insides plus 1/4 cup milk, 2-3 tbsp butter (the hot potatoes should melt the butter), 1/2 cup sour cream and mash or use mixer to break up

Add toppings of your choosing, we used chopped crispy bacon, white ends of the scallions, and shredded cheddar cheese

Pipe or scoop mashed potatoes into the hallowed out potatoes and top with more cheese and bacon

Continue to bake for 20 minutes until cheese crisps and finish with scallions!
