Vodka Pasta with Burrata
Creamy tomato vodka pasta finished with fresh basil, Parmesan, and room-temperature burrata.

Ingredients
- 1 medium shallot
- 2-3 cloves garlic
- 1/4 cup olive oil
- 1/2 cup tomato paste
- Red pepper flakes or Calabrian chili paste
- 3 tbsp vodka
- 2 cups heavy cream
- 1 lb pasta
- 1 cup reserved pasta water
- 2 tbsp butter
- 1 cup freshly grated Parmesan
- Fresh basil
- Fresh burrata
- Salt and pepper

Add one medium finely cut shallot and 2-3 cloves grated garlic to 1/4 cup olive oil in a large pan

Sweat down for 3-5 minutes and add half a cup of tomato paste, let it caramelize

Add as much red pepper flakes or calabrian chili paste as you want (we use about 1/2-1 teaspoon), 3 tablespoons of vodka and cook off alcohol (1 minute)- you can always add more spice later but start here.

Add 2 cups heavy cream

Make 1lb pasta and heavily salt water, you can use any pasta you want - SAVE 1 CUP PASTA WATER

Quick tip: under cook the pasta ever so slightly, like 1 minute under so it finishes cooking in the sauce

Add a bit of pasta water at a time, 2 tablespoons butter, 1 cup of freshly grated parm, and chiffonade fresh basil to sauce - don’t forget to taste for salt and pepper

Finish off with fresh room temp burrata, parm, and more basil
