Orecchiette with Sausage and Broccoli Rabe

This is an elite pasta combo and the sauce comes together easily in one pot. You guys are going to love this!
Ingredients
- 1 bag fresh Orecchiette, 1 lb box of dry pasta works as well
- 1 lb Italian sausage, hot & sweet (we used 2/3 part sweet and 1/3 hot)
- 1 bunch broccoli rabe, roughly chopped
- 2-3 cloves garlic, sliced thin
- 1 teaspoon, calabrian chili paste or red pepper flakes, optional
- 1/2 cup white wine
- 1/4 cup water
- 1 teaspoon lemon zest
- 1-2 cups freshly grated pecorino
- Salty pasta water
- Cracked pepper and olive oil for serving
Instructions
- Remove sausage from its casing and brown in a pan on medium heat in a pan large enough to toss your pasta in
- Once browned, add garlic and calabrian chili paste, stir to combine, top with white wine, broccoli rabe, water, and lemon zest and let cook on medium-low heat
- Meanwhile, cook pasta in salted water (salt it like the sea), undercook it slightly so it can finish cooking in the sauce
- After the pasta is cooked add that into the sauce pot with the pasta, some pasta water, pecorino, and season with salt and pepper
- Plate and top with a drizzle of olive oil, pecorino, and pepper
