Tuna Poke Bowls
Poke bowls are surprisingly really easy to make and we love them as a hearty nourishing summer dinner!
Ingredients
- 2 filets sushi grade tuna
- 3 tbsp soy sauce, optional + 1 tbsp coconut aminos
- 2 1/2 tbsp sesame oil
- 2 tbsp rice wine vinegar
- 1/2 onion, sliced
- 4 scallions, diced
- Sesame seeds
- 3 baby cucumbers, diced, optional season with a sprinkle of salt, dash of rice wine vinegar, and sesame oil to pickle
- Spicy Mayo - 2:1 ratio kewpie mayo to sriracha, + a dash of sesame oil
- Toppings of your choosing such as; avocado, mangoo, scallions, edamame, seaweed salad, togarashi seasoning, sesame seeds
Sushi Rice
- 2 cup uncooked sushi rice
- 1/4 cup unseasoned rice vinegar
- 4 teaspoons sugar (or honey)
- 1 teaspoon salt
Instructions
- Start by making your rice on the stove or rice cooker
- Meanwhile, prep your tuna by dicing it and marinating with soy, sesame oil, rice wine vinegar, onions, scallions, and sesame seeds - let marinate for 30 minutes
- Mix spicy mayo and dice all toppings
- To season your rice microwave rice wine vinegar, salt, and sugar so it's slightly warm and the ingredients dissolve - slowly pour over cooked rice and taste for flavor adding more of the vinegar mixture as desired
- Top the warm rice with fish and toppings - ENJOY!
