Twice Baked Potatoes

 

Perfect comfort food to make right now!

Method

  • Start by baking your potatoes for about an hour at 400 degrees, poke with fork a few times, drizzle with olive oil and sprinkle with salt and pepper

  • Once soft to the touch let cool slightly then cut in half, scrape out insides leaving a thing layer so the potatoes stand up

  • To make filling: we used 3 potatoes so add the insides plus 1/4 cup milk, 2-3 tbsp butter (the hot potatoes should melt the butter), 1/2 cup sour cream and mash or use mixer to break up

  • Add toppings of your choosing, we used chopped crispy bacon, white ends of the scallions, and shredded cheddar cheese

  • Pipe or scoop mashed potatoes into the hallowed out potatoes and top with more cheese and bacon

  • Continue to bake for 20 minutes until cheese crisps and finish with scallions!
