Beef Pepper Rice

This is a copycat dish from a popular chain in Tokyo, Japan, Pepper Lunch. They serve sizzling platters of beef and rice with all kinds of toppings. This is their signature beef pepper rice but there's so many ways to customize it. We find it to be such an easy and delicious dinner so we highly recommend trying this recipe!
Ingredients
Beef Pepper Rice
- 1/2 lb - 1lb sliced shabu shabu beef (you could also buy a ribeye, freeze it and slice it very thin)
- 3-4 cups cooked rice, day old works best but it's not required
- 1 small onion, sliced
- 1 cup canned corn (or extra if you'd like)
- 2 tbsp butter
- Scallions
- Sesame seeds
- 8 cloved garlic, sliced thin - optional for garlic chips
- 1 tbsp neutral oil
- Fresh cracked pepper
Sauce
- 2 cloves grated garlic
- 1 tbsp grated ginger
- 3 tbsp soy sauce
- 3 tbsp honey
- 1 tbsp mirin
- 1 tbsp oyster sauce
- 1 tbsp rice wine vinegar
- 1 tbsp water
- tons of fresh cracked pepper
Instructions
- RICE: Prepare your rice - we used fresh rice but day old rice will work well. We like to add the rice to a bowl and pat it down to form a dome
- GARLIC CHIPS: This is optional but heat a neutral oil on medium and when it's hot add garlic slices, these will fry up fast, transfer to a paper towel 1 minute before they look complete (they will keep cooking), set aside
- SAUCE: Combine all ingredients listed
- PEPPER RICE: Cook onion in cast iron pan on medium heat in 1 tbsp of neutral oil for 3 minutes, push onions to the center and top with your bowl of rice, bump up the heat a little and place meat directly on the cast iron all around the onions and rice. Coat meat in sauce and let sizzle (if you have extra sauce pour on top of the rice)
- TOPPINGS: Top with corn, 2 tbsp butter, scallions, sesame seeds, garlic chips, and lots of fresh cracked pepper - mix WELL and let cook ever so slightly
- Finish with more toppings and enjoy!
