Episode 7 of our cozy dinner series cannot get any cozier than a puff pastry chicken pot pie. This dish is so nostalgic and extremely delicious, also, it’s very easy to make.
Ingredients
- 3 boneless, skinless chicken breasts
- 1 tbsp of garlic powder
- 2 tbsp olive oil
- 3-4 carrots, peeled and diced
- 2-3 celery stalks, diced
- 1/2 an onion, diced
- 2 cloves garlic, minced
- 1 large leek (bottom whites only), washed well and diced
- 10-15 medium sliced button or cremini mushrooms, cut into 6ths or 8ths
- 5 springs thyme removed from the stems
- 3 tbsp butter
- 2 tbsp Cognac
- 1/3 cup flour
- 1/4 cup heavy cream
- 2 cups chicken broth
- 1/4 cup parsley, chopped
- 2 sheets thawed puff pastry
- 1 egg, for egg wash
- Salt and pepper to taste
Instructions
- Preheat your oven to 350 degrees and coat chicken in 1 tbsp olive oil then season with salt, pepper, and garlic powder on both sides - roast for 20-30 minutes until cooked through, set aside to cool
- In large dutch oven on medium heat, add butter and remaining tbsp of olive oil to a pan and saute carrots, celery, onions, and leeks for about 5 minutes, season with salt and pepper
- Add mushrooms, thyme and garlic and continue to cook
- Once all are softened (do not overcook because you still want some texture to your mixture), add flour and toast off to remove the flour-y flavor
- Add cognac and cook off the alcohol and top with cream and chicken broth,
- Now that your chicken has cooled, pull the chicken with two forks to shred, add to the filling mixture with parsley - make sure the liquid isn’t too loose or too thick and taste for seasoning
- Take your thawed puff pastry and lay across in your 8-10 inch pie crust, smoothing down the sides to fit the pan
- Top base layer with chicken mixture, be sure not to over stuff but it should just fit
- Roll out second layer of puff pastry and top mixture with it, cut off the excess
- Pinch the two layers together and seal with a fork then brush lightly with an egg wash mixture
- Increase oven temp to 400 degrees and bake for about 25-30 minutes until golden and cooked through
